Cilantro Lime Rice
INGREDIENTS
half onion, chopped
one (4 ounce) can green chilies
one tablespoon minced garlic
one lime, juiced
half bunch cilantro, chopped
three cups water
four teaspoons chicken bouillon granules
one teaspoon salt
one tablespoon butter, softened
three cups uncooked instant ric
INSTRUCTIONS
Blend the onion, green chiles, garlic, and lime juice together in a food processor till smooth; add the cilantro and pulse till the cilantro is finely chopped into the mixture. Bring the water to boil in a saucepan. SMix the cilantro mixture, chicken bouillon granules, salt, butter, and rice into the water and return to a boil; reduce heat to medium-low and cover. Simmer until the rice has absorbed the liquid entirely, about twtenty minutes.
