COW TONGUE TACOS - BARBACOA DE LENGUA

This is a family favorite of ours, but it was the first time that I ever got the tongue myself.


While I was down at @shalomacres with @mericanhomestead, @beatitudes8, and @randomstuff, we butchered a cow. Many hands make light work, so it went well with all the people that we had helping. Just as we were about to give the remains a "viking funeral" I noticed something.

The head was on top of the burn pile, with the tongue hanging out of its mouth. I took one look at that and knew that there was no way @mama-pepper would ever let me allow the tongue to burned rather than eaten. Though I had never done so before, I figured that I had better go in there and get it out.

I successfully completely part one, which was obtaining the tongue. Below, I will show you how we cook it.

INGREDIENTS

Here is the basic list of what we use when we make our tacos. Individual taste and preference will vary, so if you do try this recipe, feel free to tweak it and "make it your own."

  • Cow Tongue
  • Corn Tortillas
  • 1 Bunch Cilantro
  • 1 White Onion
  • Salt & Pepper
  • Hot Sauce as Preferred
  • Limes or Key Limes if Desired

COW TONGUE TACO RECIPE

We place the whole, washed tongue in a slow cooker with about a half cup of water. We find it best to cook it on low heat for ten to twelve hours.


Once it is fully cooked, it should look like this. The meat should be able to fall apart as you begin to work with it, so if it is very rubbery, you may need to cook it for longer.


Remove the outer layer of skin to expose the meat within.


Using two forks, begin to shred the meat. If the meat is cooked all the way through, this should not be very difficult.


This is what the meat should look like when it is ready. Season with salt and pepper if desired.


Warm the corn tortillas on a skillet so they become soft, warm, and pliable.


Wrap the corn tortillas in a small towel to keep them that way.


Chop the cilantro and place in a bowl.


Dice the onion and place in another bowl.


Set the hot sauces of your choice on the table.

MAKE THE TACOS AND EAT!

After thanking God for the food with your family, it is time to make the tacos and be blessed with a delicious meal. Just put some of the shredded inside one of the corn tortillas, top with cilantro, onions, hot sauce, and a squeeze of a fresh cut lime. Then, enjoy!

We've been eating these for years, and they are much better than the name may lead you to believe. In fact, I've even claimed that they are so tasty, it kind of makes you wish that the whole cow was just one giant tongue out in the field, like a half ton slug or something. If you do give these a try, I think that you will be impressed.

Wow ! I have never tried tongue before but i do use my slow cooker a lot , and everything comes out so tender in it , it falls apart ! So im sure this is key to cooking tongue ! Your Tacos look yummy @papa-pepper ! 😋😋😋👌👍

Lengua done right can be super tender. To me its like a beef roast. Great for tacos. I'm glad to see another brother of the taco representing on steemit. In Texas we got some killer Tex-Mex and barbacoa is a staple here.

@papa-pepper, that's a very delicious meal you are taking, cow tongue is one of the most delicious part of the cow meat just like the cow heart, I love this parts of the cow very much because they are more proteinous.

What a great tongue lengua tacos food specially if it is very fresh ingredients amazing, told me the tongue was very fresh?

I remember eating a cow tongue taco as a older teenager at a restaurant. It was good, but that’s all I remember about it. Your pictures however makes it look delicious.

My grandpa was a butcher and he used to do the tongue as a curred and smoked delicately. Man, I used to hate it as a toddler, then as I grew older it kinda grew on me. No pun intended :)

Yep, me too, and smoked tongue is a tradition here in Croatia - you can still find it in specializied butcher-shops.

Wow! I never would have thought the tongue would be anything better than edible...
Ive only ever cooked cow tongue once in my life. When I was about 14, we helped another family butcher a cow. We ended up bringing home the tongue too, and my mom sure wasnt going to mess with it, so I cooked it for my dog.
My dog Milo would not touch the thing! He would rather starve than eat it so it ended up thrown away.
I always figured, if even the dog wouldnt eat it, it must not be any good... But your post makes me reconsider...

Here in my Mexico City it's easy to find lengua tacos but it's steamed and thinly sliced and served as is, delicious, usually sold along the whole head, so you can get even eye tacos, which are delicious as well

Love me some lengua! I cook the tongue in the pressure cooker to get the same effect - it falls apart and is PERFECT for tacos or burritos. mmmmm...must have a taco night soon :) Thanks for the reminder :)

My absolutely favourite! Raising cattle means I get the best parts...luckily that also corresponds with the cuts others don't want...tongue, cheeks, hanging tender, heart....soooooooo good. I'm drooling. Time to pull some out of the freezer!

We love tongue! (that sounds kind of rude, sorry) but I have never made tacos with it. These look really delicious. We slow cook the tongue too. Peel the skin off and slice into pieces about a half inch thick. Then I make a homemade tomato sauce with wild mushrooms. Plate it up with mashed potatoes ad fresh garden veggies and you have yourself a feast!

I can honestly say that I've never knowingly eaten the tongue of any animal and I'm not sure if I would try this, maybe if I didn't see it until after it was ready to serve, it'd have a chance. :D

The tongue is a very undervalued cut. I've only had it once but I was impressed.

I haven't eaten cow tongue tacos but I've eaten cow tongue pepper soup. Like the name implies, there's lots and lots of pepper.
And yes, cow tongues are muy tasty 😋

Good eye on noticing that tongue before it was too late! My grandmother used to cook them -- so good. Her dad, uncles, and grandfather were butchers, so they had plenty!
