嗨,大家好。猪肉是很普通的食材,不过山猪肉就不是到处能找到的食材。山猪肉又称野猪肉,其野味浓郁、肉质鲜嫩香醇、瘦肉率高而脂肪含量却比普通猪肉低一半。山猪肉的煮法自然也跟普通猪肉不一样了。今天我要与大家分享的食谱就是焖山猪肉。
∼∼五香酱油焖山猪肉∼∼
食材
山猪肉 400克
青花椰菜 150克
八角 10克
五香粉 1汤匙
黑酱油 2汤匙
生抽 1汤匙
盐 ½小匙
蒜米 20克
食油 1汤匙
清水 ½杯
准备
在砧板上将山猪肉,切小片状备用。将山猪肉放入沸水中浸泡十分钟左右。然后倒入过滤网拿沥干备用。
在砧板上将蒜米去皮,剁成蒜末备用。
将八角用瓶装捶碎备用。
将花椰菜洗净切小备用。
煮法
首先,将油倒入热锅中烧热。然后放入蒜末、八角和五香粉稍微翻炒一下。
等蒜末煎至金黄色,就可以把沥干的山猪肉倒入。翻炒五分钟左右。
然后倒入可以盖过山猪肉面的清水就够了。然后盖上锅盖以中火焖煮。
焖煮两分钟后,就打开锅盖,倒入生抽和一汤匙的黑酱油。用锅铲搅均再盖上锅盖继续焖煮。
每隔两分钟打开锅盖一次,检查水量。等待水量差不多干就好了。时间大概需要十多分钟左右。
开盖后,将其余的黑酱油倒入,在翻炒两分钟左右就可以熄火取上盘子了。
将花椰菜放入蒸锅中以大火蒸7分钟左右。蒸熟后,就可以摆放在山猪肉旁边作为装饰了。
一盘香喷喷的五香山猪肉配西兰花就可以上桌了。
