Hi Friends!

Yesterday after going on a long Photo Walk, I decided to make myself a little treat when I got home.

I’m trying to reduce the amount of alcohol I drink as the next step in improving my food and every day health, which means I have been experimenting with some fun alternative drink options! Don’t get me wrong, I will always have a love affair with Vino 🍷, but mixing up little “mocktails” can be super fun too!

The Recipe

  • 6-8 frozen strawberries
  • Juice of half a lime
  • Monk fruit to taste (or your favorite sweetener)
  • Lime laCroix (or other sparking water)

I first start by blending up the strawberries, lime juice and some water until I get a thick strawberry purée.

Next, I pour it into my fancy glass of choice, and then top with Lacroix and stir. I’m not necessarily going for a blended consistency, but more of a child, bubbly, fruity drink.

I next drop in Monk fruit and stir to taste. For those that are curious, Monk fruit is a natural, sugar-free sweetener. It is less processed and doesn’t have a strong aftertaste like Stevia. If you would prefer to use honey, coconut sugar, or a different sweetener, then add it in during the blending process. I just try to keep my sugar intake low, which is why I prefer Monk fruit!

There you have it! A super easy, quick, and beautiful summer beverage. If you were feeling fancy, you could definitely garnish with a lime wedge, mint leaves, a small fresh strawberry, or any other garnish of your choice!
