Tzatziki is a sauce with grilled meats or may be served as a mezze alongside other mezzes, dishes and ouzo.
Tzatziki is made of salted strained yogurt (usually from sheep or goat milk) or diluted yogurt mixed with cucumbers, garlic, salt, olive oil, sometimes with vinegar and sometimes lemon juice, and dill or mint or parsley.It is always served cold.
Ingredients (for 8 persons)
2 (8 ounce) containers plain yogurt
2 cucumbers - peeled, seeded and diced
2 tablespoons olive oil
1/2 lemon, juiced
3 cloves garlic, peeled
1 tablespoon chopped fresh dill
salt and pepper to taste
In a food processor or blender, combine yogurt, cucumber, olive oil, lemon juice, salt, pepper, dill and garlic. Process until well-combined. Transfer to a separate dish, cover and refrigerate for at least one hour for best flavor.
