Vegan Taco Filling
Ingredients
one tablespoon olive oil
one onion, diced
two cloves garlic, minced
one bell pepper, chopped
two (14.5 ounce) cans black beans, rinsed, drained, and mashed
2 tablespoons yellow cornmeal
one and half tablespoons cumin
one teaspoon paprika1 teaspoon cayenne pepper
one teaspoon chili powder
one cup salsa
INSTRUCTIONS
Heat olive oil in a medium skillet over medium heat. Mix in onion, garlic, and bell pepper; cook till tender. Stir in mashed beans. Add the cornmeal. Mix in cumin, paprika, cayenne, chili powder, and salsa. Cover, and cook five minutes.
