Collard Greens
Greens have always been an essential part of the Thanksgiving meal in my family. When my mom shared her recipe I had to tweak it to make it vegan, but the steps are easy and the result is just as tasty!
Ingredients:
2 lbs of washed and cut collard greens
1 cup of vegetable broth
2 cups of water
Dash of liquid smoke
1 teaspoon of garlic powder
1 teaspoon of onion powder
1 pinch of baking soda
Freshly ground black pepper to taste
Directions:
Bring vegetable broth, water, and liquid smoke to a boil in a large pot on high heat.
Add collard greens and allow to boil for 5 minutes before stirring.
Add garlic and onion powders, baking soda, and black pepper. Reduce to medium heat and cover for 15 minutes. Reduce to low heat and cook covered for another 15 minutes.
