Korokke is the Japanese version of Croquette, shaped like a patty and rolled in Panko. Its easy to make and any ingredients can be added to your liking.
Recipe:
Potatoes 300gms
Bacon 100gms
Garlic 15gms
Onion 70gms
Chilli powder 5gms
Cheese 50gms
Salt to taste
For Coating:
Flour 100gms
Eggs 2
Panko or breadcrumbs 100gms
Oil for frying
Method:
- Peel and dice the potatoes.
- Boil the potatoes until soft, this might take 10-15 minutes depending on the size.
- Meanwhile, chop the onion, bacon and garlic finely. Grate the cheese.
- In a small pan, saute the bacon until it releases its oil. Then add garlic and onion and saute until the color changes to light brown. Turn the heat off and keep aside.
- Mash the potatoes using a fork or a masher. Add the onion and bacon mixture. Add cheese and salt to taste.
- Let the mixture cool down a bit. Dampen hands with water, this will stop the potatoes from sticking to your hands.
Divide and roll the mixture into small balls and flatten them slightly with your palm. Or roll them in a cylindrical shape.
7.Heat oil for frying - While the oil is heating, lay out the ingredients for coating.
first should be flour, then egg and then panko last. - When the oil is hot, roll the korokke in the flour, then egg and then panko and deep fry until golden brown.
Serve with ketchup and mayo.
