My father-in-law made some scallops like this one of the first times that I met him. They are so good and pretty easy to make. My husband loves them. Last night I served them over brown rice with roasted asparagus on the side but you could put them over pasta too.
- 1lb scallops
- 1 tbs olive oil
- 2 tbs butter, melted
- 1 tbs minced garlic
- 1/4 cup white wine
- dash of cayenne
- salt and pepper to taste
Rinse scallops with with cold water and pat dry. In a skillet over medium heat add oil and butter. Once hot add the garlic and scallops. Pan fry until both sides are brown. Add the white wine and cayenne, salt and pepper. Simmer until cooked through. Enjoy!
