Rinse and soak rice for 30 minutes. Drain water and set aside.
Heat oil in a pan and sauté chopped onions and garlic.
Add diced chicken or meat and cook until browned.
Add vegetables of your choice and cook for 2-3 minutes.
Add rice to the pan and stir to combine.
Add water or chicken broth, bring to a boil, then reduce heat and cover.
Let the rice cook for 18-20 minutes or until fully cooked.
Once done, fluff the rice with a fork and serve hot.
