Fluffy apple pie!

Today I craved for some apple pie and since I had some old apples that had started to get too soft for my taste, I put them in good use and prepared a tasty dessert in no time.

With ingredients I always keep around the house, I took no more than 20 minutes to make a delicious evening snack.

Ingredients

  • 3 eggs
  • 1 cup of sugar
  • 1/2 cup of milk
  • 1/2 cup of vegetable oil
  • 1 vanilla
  • 1 sachet of baking powder
  • 2 to 2 1/2 cups of all purpose flour (as much as it takes to have a nice batter similar to a cake's)
  • 4 apples
  • 2-3 teaspoons of cinnamon (depending on your taste)
  • 3-4 tablespoons of brown sugar

First I beat the eggs with the sugar to get a nice fluffy mixture and then added the milk, vegetable oil, flour, vanilla and gave a good stir. Then I peeled and grated one apple and added it to the batter along with half a teaspoon of cinnamon.

I poured my batter in a baking tray with baking paper and a little vegetable oil and prepared the apple topping. I peeled and grated three small apples, mixed them with 3 tablespoons of brown sugar and 1 teaspoon of cinnamon and spread evenly on the top of the batter. I sprinkled 1 more tablespoon of sugar over the apples and baked in a preheated oven of 190-200 degrees air. In about 40 minutes my apple pie was ready!!
