32 Crackers
1/4 Cup margarine or butter
8 oz. (2 Cups)shredded Cheddar cheese
1 egg, separated
4.5 oz. can small shrimp, drained
Microwave Directions: Arrange crackers on 2 napkin-lined plates. In medium microwave-safe bowl, microwave margarine on High for 10 seconds to soften. Add cheese; blend well. Stir in egg yolk and shrimp. In small bowl, beat egg white until stiff peaks form. Fold into cheese shrimp mixture. Top each cracker with spoonful of mixture. Microwave 1 plate at a time uncovered on High for about 1 minute or until hot. (32 snacks).
