The provence is France is so much more then lavender fields. If you want to experience hospitality away from tourism, I advise you to plan your trip in September. If you like to make the most of it, plan ahead and book bus- and train-tickets. Also rent a car and book on air bnb. There are some cheap, but luxurious appartements - especially off season.
Here is my list of places who have to see when going south:
Carcassonne:
Bordeaux
Marseille
Roussillon
Aix en Provence
Orange:
Saintes-Maries-de-la-Mer:
Airbnb
