Cold tomato soup
Ingredients
600 grams of tomatoes, peeled and without seeds
1/2 finely chopped onion 1/2 cucumber (not too big) 1/2 small green pepper 1 cloves of garlic
100 grams of bread crumbs (bread of 1-day old without rind, soaked in water)
olive oil
1 tablespoons of vinegar cold water
ice cubes
as a garnish of tomatoes, peppers, cucumbers and croutons
pepper salt
Preparation
Using a blender, purée part of the vegetable, a little vinegar, oil and a portion of the bread. If you have a good blender, the tomatoes do not need to be peeled. If necessary, add some cold water if it is too thick.
Season with salt and pepper. Put everything together in a bowl / pan and put it in the fridge. Let it get well cold.
Before the soup is served, add the ice cubes and stir well to make the whole thing extra cool.
Tip! Leave the soup in the fridge overnight. Then he tastes even better!
