Buenos dias comunidad hoy les comparto un plato de mi autoria, si bien es un plato bastante simple consiste de varias preparaciones. Se trata de un filet de abadejo con una croute ( costra) citrica sobre un hummus de arvejas y menta, acompañado por una guarnicion compuesta que me gusta llamar huerta de zanahorias, se trata de una "tierra" de remolacha, zanahorias glaseadas y espinacas en tempura, para completar el plato hice un aderezo de mango. Simple pero rico
