6 chiles rojos secos, sin semilla y ligeramente asados; 1 cabeza mediana de ajos asada; 2 cucharadas de achiote en polvo o en pasta; 6 pimientas de Tabasco; 2 cucharadas de orégano; 4 clavos de olor; 1/4 cucharadita de pimienta negra; 1/2 cucharadita de sal; 2 cucharadas de aceite (opcional); 1 taza de jugo de naranja agria o jugo de naranja dulce con jugo de limón o vinagre suave de manzana o del barrilito.
Se asan ligeramente las especias. • Se muelen con el jugo de naranja, el aceite y el chile.
