1 kilo de masa pare tortillas; 100 gramos de manteca de res; 300 gramos de manteca vegetal; caldo en que se coció la came; hojas secas de maíz, remojadas y escurridas. RELLENO: 1/2 kilo de came seca, gorda, cocida y picada y su caldo; 1/4 kilo de chile ancho, limpio y sin semillas; 40 gramos de manteca; 1/4 kilo de j itomate cocido; 3 dientes de ajo; 5 pimientas negras; sal.
Relleno: • El chile se tuesta, se remoja en un cuarto de litro del caldo tibio en donde se coció la came, después se muele con las especias, el ajo y los jitomates, se fríe en la manteca y se le agrega la carne y se deja hervir hasta que reseque un poco. • Se bate la manteca de res hasta que esponje, se le agrega la manteca vegetal y se sigue batiendo, se le incorpora la masa y el caldo necesario para formar una masa. • A las hojas de maíz se les unta un poco de masa, se les pone en el centro un poco de relleno, se hacen los tamales y se cuecen al vapor durante 1 hora.
