When you walk across a meadow on a warm spring day and inhale the scent of freshly cut grass, you're not actually smelling the grass itself. Various chemical compounds released by the plants as a defense mechanism are responsible for the pleasant smell. These are released when the plant is damaged, for example, when it is cut.
