Hello beautiful people, it is a pleasure to join this contest. I do wish all steemians luck as myself, I am @estysam.

The local dish I prepared is called African Salad, Nsisa or Abacha as most people call it. It is a Nigerian food, precisely Igbo. It is very simple to prepare and nutritious too, no wonder it is been prepared during most traditional weddings of Igbo brides. Most beer parlous and local eataries sell it. It is often eaten along side with palm wine.

Recipe

Stockfish/dryfish/ cow skin(kanda)
Garden eggs
Palm oil
Akanwu that is potash or sodium carbonate (Igbo) or ngu( Igbo)
Crayfish
Seasoning cubes, pepper, salt, onions
Processed cassava
Oil bean that is ugba(Igbo)
Utazi leaf(Igbo)

Procedure

  1. Soak the processed cassava in hot water to hasten its softness and also kill germs

  2. Wash and cook the stockfish, dryfish and cow skin with the pepper, seasoning cubes, onions and salt

  3. Chop your garden eggs and utazi leaf and set aside

4.Mix the ngu or akanwu with red oil until it forms a paste. ( I used ngu so that a pregnant woman can also eat the food if she wishes as it doesn't have effect on the growing baby unlike akanwu or potash).

  1. Seive the processed cassava and transfer to a pot or bigger pan, add crayfish , stockfish or cow skin stock, garden eggs, oil bean and utazi leaf to the pot and allow to simer for 1 to 2 minutes so that the meat stock can dry on the body of the processed cassava. Stir while on fire.

  2. Bring the pot down and serve with palm wine or any drink of your choice.
    Your African Salad, Nsisa or Abacha is ready for consumption
