My second entry for Steemit Iron Chef 2018 Act 01 Round 05.
Vegan pizza
Vegan cheese:
150 g of cashews
1 dl of warm water
4 tablespoons of tapioca flour
3 tablespoons of olive oil
1 tablespoon of lemon juice
1 tablespoon of powdered yeast
1 garlic clove

Put 150 g of cashews in the water and leave it overnight.
Strain cashews, put it in a blender and blend it. Add 1 dl of warm water and blend more. Put it in a pan and add 4 tablespoons of tapioca flour, 3 tablespoons of olive oil, 1 tablespoon of lemon juice, 1 tablespoon of powdered yeast, 1 chopped garlic clove, salt and cook it on low heat for a few minutes until the mass gets dense.
Ingredients for 2 pizzas:
400 g of flour
20 g of fresh beer yeast
1 teaspoon of sugar
3 dl of warm water
2 tablespoons of olive oil
1 teaspoon of salt
100 g of broccoli
2 carrots
50 g of corn
1 onion
100 g of cherry tomatoes
1 red paprika
2 zucchini pumpkins
few black olives
1 tablespoon of olive oil
1 dl of tomato juice
1 teaspoon of sugar
oregano
parsley
basil
powdered sweet smoked paprika
pepper
salt

Mix 3 dl of warm water (around 30 °C) with 1 teaspoon of sugar and 3 tablespoons of flour. Add 20 g of fresh beer yeast and put it in a warm place (up to 35 °C) and wait until it rises.
Put 400 g of white wheat flour in a bowl. Add 1 teaspoon of salt and bury it in flour. Add yeast and 2 tablespoons of olive oil.
First start mixing it with a wooden spoon then start kneading it with your hands. Add some flour if needed. Leave it in a warm place (around 30 °C) until the dough rises and cover it with a kitchen cloth.
The dough rose enough when it gets one time bigger. Knead the dough and leave it rises again.
Cook 50 g of corn.
Boil water and cook 100 g of broccoli and 2 carrots for 5 minutes. Cut the carrots.
Cut 1 red paprika, 2 zucchini pumpkins on any shape, shake it with salt and roast it in a pan with a tablespoon of olive oil.
Shake cherry tomatoes with chopped parsley, roast it for a minute and cut it on half.
Cut the onion.
Mix 1 dl of tomato juice with 1 teaspoon of sugar, oregano, parsley, basil, powdered sweet smoked paprika, pepper and salt.
Stretch dough in a round shape and put it on a baking tray covered with baking paper.
Spread tomato juice on the dough and put vegetables on it.
Put vegan cheese on top of your pizza.
Bake it on 270 °C until the crust gets golden yellow color.
I have seen so many steemians showing recipe of their vegan cheese, I have never tasted but looks very interesting! Another one for me to try soon!

I really like vegan cheese, with usage of different spices it can be adapted to every taste. And it occurs to be healthier and easier to digest than lactic acid fats.
