Cucumber Tomato Feta Salad

Steemit Iron Chef 2018 Act 01 Round 03

The 2018 Steemit Ironchef challenge is here! This year @progressivechef broke up the contest into 3 seperate 'Acts' consisting of 15 rounds. The special ingredient for Act 1 of Round 3 of the 2018 @steemit-ironchef challenge is the Cucumber. I decided to make a healthy and refreshing Cucumber Tomato Feta Salad that is perfect for a summer day. Although it's the middle of Winter over here, this salad had me daydreaming of the warm weather.

Ingredients

1 English Cucumber
1 Red Onion
3 Roma Tomatoes
Juice of 1 Lemon
4 oz of Feta Cheese Crumbles
Fresh Cilantro
2 tbsp of Olive Oil
2 tbsp of Balsamic Vinegar
1 tsp of Garlic Powder
1/2 tsp of Salt
1/2 tsp of Pepper
1/2 tsp of Ground Cumin

Step 1: Chop the Veggies

Chop up the cucumber, onions and tomotoes

Step 2: Combine in a Bowl

Combine the chopped veggies in a bowl with 4 oz of Feta cheese and a bit of fresh cilantro.

Step 3: Mix the Dressing

In a small bowl, mix together the juice of 1 lemon with 2 tbsp of Olive Oil, 2 tbsp of Balsamic Vinegar, 1 tsp of Garlic Powder, 1/2 tsp of Salt, 1/2 tsp of Pepper and 1/2 tsp of Ground Cumin.

Step 4: Pour It On!

Pour the dressing over the bowl of veggies.

Step 5: Toss It Up!

Mix the salad with the dressing until well incorporated.

Step 6: Serve & Enjoy!

A refreshing, healthy and delicious salad.
