Pan Seared Chicken topped with an Avocado Carrot Spread
Ingredients:
1 avocado
1 cup grated or thinnly sliced carrots
1/2 tsp mango powder
1/8 tsp cumin powder
1/8 cup finely diced onions
diced green chilies (optional for spicy)
lemon juice to taste
pepper to taste
chicken
lemon juice
1/2 tsp garlic powder
1/2 tsp ginger powder
pepper to taste
celery salt
pinch or coriander powder
Method:
-lightly sauté carrots with a little oil, mango powder and cumin powder, set aside
- in a bowl, combine avocado, onions, lemon juice, and pepper
-add carrots and mix with the avocado
-marinate chicken breast with lemon juice, garlic powder, and ginger powder; combine in ziploc bag and keep in freezer a couple hours before cooking.
-season chicken with pepper, celery salt, and a pinch of coriander powder.
-sear both sides on high heat for a couple mins, then lower heat to low, cover and cook till cooked through (chicken always has to be cooked well, no rare or medium rare)
plate chicken, top with avocado and carrot spread, and enjoy!
