The Best Soup For Healthy Weight Loss
This is an old family recipe that helps in weight loss. The soup is rich in proteins and minerals and helps to jump start the immune system. This soup serves four guests.
Ingredients
1 tablespoon of virgin olive oil, cold pressed works best
1 onion, make sure to slice it very thin so that the juices can absorb into the soup 2 teaspoons of cumin seed
4 cloves of freshly sliced garlic 2 cans of chickpeas, drained and rinsed well
½ cup of tahini (sesame seed paste)
4 cups of vegetable broth, preferably low sodium content
3 tablespoons of fresh lemon juice
A pinch of salt and pepper
Directions
1. SAUTE the cumin seed in the olive oil using a large stockpot until fragrant and beginning to pop, about 1 minute. Add the onion and garlic and cook 5 to 7 minutes more, until the onion begins to soften. Add the chickpeas, tahini, and vegetable broth, and stir well.
2. SIMMER the mixture, stirring occasionally, for a period of approximately 5 to 10 minutes.
3. TURN OFF THE HEAT and remove the soup from heat and stir in the lemon juice. Season with salt and pepper to taste. Serve warm. Enjoy!
