I'm just wondering about whether it is stored by them or if it's only used for the initial verification and then discarded. Most of what I've seen makes me assume the latter, but Steemit is a company (It's a great one though) and companies tend to keep info like that for legal and/or marketing reasons.

Hmm...the FAQ does not say and a quick search did not turn up an official company statement. Even if there were an official privacy statement, as a practical matter, my rule of thumb is that anything that you divulge to another party becomes less reliably private.
As just one example, no company can 100% guarantee that it won't have a rogue employee, even if their overall intention is to respect privacy.
So, as with anything privacy related it's all about understanding, mitigating and finding your degree of comfort with certain risks.
