Ingredients:
1 whole chicken, cut into pieces
1 coconut, grated and extract the coconut milk
10 shallots
5 cloves of garlic
7 candlenuts
2 cm turmeric, roasted
2 cm ginger
2 cm galangal
3 stalks lemongrass, bruised
5 kaffir lime leaves
5 bay leaves
2 tablespoons tamarind juice
2 tablespoons palm sugar, finely grated
Salt to taste
Sufficient cooking oil
Instructions:
- Grind shallots, garlic, candlenuts, turmeric, ginger, and galangal into a paste.
- Heat cooking oil, sauté the ground spices with lemongrass, kaffir lime leaves, and bay leaves until fragrant.
- Add the chicken, mix well with the spices.
- Pour in coconut milk and tamarind juice, stir well.
- Add palm sugar and salt, stir again.
- Cook over low heat until the chicken is tender and the spices are absorbed.
- Remove from heat and serve Ayam Betutu with steamed rice.
