Ingredients:

1 whole chicken, cut into pieces
1 coconut, grated and extract the coconut milk
10 shallots
5 cloves of garlic
7 candlenuts
2 cm turmeric, roasted
2 cm ginger
2 cm galangal
3 stalks lemongrass, bruised
5 kaffir lime leaves
5 bay leaves
2 tablespoons tamarind juice
2 tablespoons palm sugar, finely grated
Salt to taste
Sufficient cooking oil

Instructions:

  1. Grind shallots, garlic, candlenuts, turmeric, ginger, and galangal into a paste.
  2. Heat cooking oil, sauté the ground spices with lemongrass, kaffir lime leaves, and bay leaves until fragrant.
  3. Add the chicken, mix well with the spices.
  4. Pour in coconut milk and tamarind juice, stir well.
  5. Add palm sugar and salt, stir again.
  6. Cook over low heat until the chicken is tender and the spices are absorbed.
  7. Remove from heat and serve Ayam Betutu with steamed rice.
