These are lovely pineapple pastries .I love them since my childhood as I used to visit A pastry shop and used 5o get fascinated by them.
These are so delicious and marvellous.
The idea of presentation is ny own .
They consist of a suoer soft sponge made with 8 eggs🤣🤣 and layered with Pineapple icing and topped with canned pineapple and chocolate strips which are home made.

Super soft vailla roulade cake.

Ingredients
egg yolks 6
egg whites 6
sugar 120 g for egg whites
vanilla 1 tbs
milk 60 g
plain flour 120g
white vinegar half tbs
oil 60g
pan size 37cm×24cm
Procedure:
Beat egg yolks and then take milk , oil and vanilla and whisk until smooth.Now add sifted flour and mix until incorporated well but dont over whisk.
Mix it till combined.
In a separate bowl whisk egg whites by adding half tbs white vinegar in the beginning and then add sugar in the mid..and whisk until stiff peaks are formed.
Now fold these whites into the other mixture and dont over mix or fold...
Pour the batter into the pan ( tray) lined with parchment paper and spread a thin layer.
Bake in a pre heated oven 120 °c for 20 min and 150°c for 8 min.
Dont burn cake , keep an eye.It should bounce back upon gentle touch.
Dont remove cake immediately from the hot oven ..leave oven door open for 10 mins take it out.
For pineapple icing with fresh cream not butter cream
Take 4 cups of whipping cream
2 cups of icing sugar
pineapple essence 1 tsp
pineapple chunks medium sized for adding in between the layers of sponges with whipped cream...
Procedure.
Take whipping cream whip it by adding essence and icing sugar..
Now dividecake into two halves and slit them from centre to make 2 layers of each half.
Now take one layer of sponge, damp it down well with pineapple juice or syrup of canned pineapple
and ice it with cream and top up with some pineapple chunks and put 2nd layer of the cake and do the same..
Make 4 layers in the same way and top layer would have no pineapple chunks except for decoration once the cake is ready.
Decorate cake as you like...
Now trim the sides of the cake and cut them like pastries , serve
and enjoy.
