Steemit Sandwich Contest Week #75 - Breakfast Sandwich on the run

So guys and dolls, how has 2019 been treating you so far? I do hope you've had a good break and you're ready to tackle the new year with all it's ups and downs!

The new school term started today in my country and I guess many Moms and Dads of little newbies shed a tear or two seeing their babies off at big school! I do hope their lunch boxes were filled with a healthy sandwich and not any junk food as they need all the nourishment for good brain health at this young age, so please remember that Moms and Dads :)

Running a bnb cum self-catering establishment really is not for sissies, especially during the hottest season of the year, and that literally means hot as in temperature hot, as it's high summer here, but also hot as in guests coming in and out like clockwork for the past couple of weeks.
We had grannies and grandpas, two sets of twins, babies, tots and teens, so it has been a real family affair here.
We even had a MR RIGHT and a MRS always RIGHT staying over ;)

Our staff go homes to their families in the rural areas so hubby and I spent our days running up and down, arms laden with linen and when it was time for guest changeovers, this is what Lily's Cottage looked like, chaotic as everything is stripped for the new guests!

Sorry for veering off the topic of sandwiches, but during all this madness, the simple sandwich came to my rescue a good couple of times.

So I challenge you to join in the fun here for this week's Steemit Sandwich Contest Week #75 run by @jaybird, yes been going for 75 weeks already, quite amazing!

We all make sandwiches, whether it's using bread, wraps, pita breads, pancakes, tortillas, buns, lettuce or kale leaves, pastry or whatever else you fancy, so tell us about it here on Steemit!
No need for just a conventional sandwich, just follow the rules in @jaybird's post and do not forget that validation sign!

So I felt quite pooped this week and have been a tad slow in the mornings but having a type 1 diabetic hubby who is on insulin, I cannot let him skip breakfast or we will have a hypoglycemic episode and that is scary for him as well as for me!

I will tell you a little secret but you probably know that already, what is the quickest thing you can throw together, besides a sandwich, for any time of the day? An omelette of course and this will be the filling for a perfect breakfast sandwich on the run!

• 3 Eggs beaten with seasoning
• 1 Tomato diced
• Half Onion sliced
• Leftover Spinach & mushy Peas
• Leftover Pesto from my Back to School Mediterranean Mini Dagwood
• Mature Cheddar cheese grated
• Bread Squares born & bread in KZN, full of fibre and really tasty

Eggs into hot pan, one half topped with all the above except the bread squares of course ;)


Flip omelette over, grate a little extra cheese on top, cut in half and pop onto bread square.

Seal your sandwich with the other bread square and tuck in :)
