Kitchen Witch Thursdays - Slow Cooker Herb Chicken

I've done slow cooker chicken before, but this one packs a more flavorful punch than the one I posted before. It also uses oil with the slow cooker instead of water or other liquids which gives it a sort of 'fried' taste that I personally like.

You'll Need The Following;

  • 1 boneless, skinless chicken breast per person you're intending to serve (or equivalent of other chicken parts)
  • Sage, rosemary, thyme, chopped garlic and lemon juice in some vegetable or olive oil
  • Optionally - a few sticks of butter

Now honestly, you can use any herbs you like but these are the ones I like. It's also better if you steep the herbs in the oil in a jar like the one shown before for a few days before cooking. This lets the oil take on the flavors more and then infuse them into the meat better as well.

You can also use whatever ratio you like of herbs to oil. I used 1 tablespoon of each herb and the lemon juice to the whole jar of oil, but obviously the more you use the more flavorful the oil will be.

Now comes the cooking part. Put your chicken in a slow cooker and pour in your oil. In a jar the size of that shown won't be enough to cover the chicken so either use a bigger jar (and thus, more herbs) or butter to make up the liquid.

This has the butter in it and it's already melted, and integrated pretty well into the oil blend.

Keep the slow cooker on low and let the chicken cook. If you put the slow cooker on high the oil heats up too much and you'll run a burn risk so just leave it at low.

Check on the chicken every hour or so until it's pretty much falling apart.

Dig the chicken out of the oil once it's cooked. I have a scooping spoon with drain holes in it for like pasta and stuff that I used, and let it drain pretty well before putting the chicken down on a plate.

And bam, you have some amazing and delish chicken! I ended up making some rice and putting this stuff over it, but this is the kind of chicken that's great with stir-fry or as a main dish with something like potatoes or other vegetables on the side :)
