Rendang Vegetarian
Rendang adalah nama masakan khas Padang, Sumatera Barat, Indonesia. Karena kelezatannya, masakan ini sangat disukai banyak orang dari hampir seluruh dunia. Saya pun sebagai orang Sunda sangat menyukainya. Tak heran jika masakan ini disebut masakan paling enak di dunia. Kelezatan rendang oleh karena bumbunya yang kaya dengan rempah-rempah. Kali ini saya akan membagikan resepnya. Tapi, rendang yang saya buat adalah rendang vegetarian.

Rendang is the name of a typical cuisine of Padang, West Sumatra, Indonesia. Because of its delicacy, this dish is very much liked by many people from almost all the world. I also as a Sundanese love it very much. No wonder if this dish is called the most delicious cuisine in the world. The delicacy of rendang because of its rich herbs with spices. This time I will share the recipe. But, rendang that I make is rendang vegetarian.
Let's see the recipe!
Bahan bahan:
- 1 kg gluten cara membuat gluten bisa dilihat di youtube).
- 1000 cc santan kental
- 500 gr kelapa muda yg dipanggang dan diblender sampai keluar minyak.
- 1 cm lengkuas Dimemarkan
- 2 batang serai dimemarkan
- 1 lembar daun kunyit
- 3 buah belimbing wuluh
Bumbu yang dihaluskan:
- 20 butir bawang merah
- 5 siung bawang putih
- 1 cm kunyit
- 1 cm jahe
- 250 gr cabe giling
- garam secukupnya
Ingredients:

- 1000 cc thick coconut milk
- 500 grams of young coconut which is roasted and blended until oil exits.
- 1 cm galangal Dipem
- 2 stalks of lemon grass
- 1 sheet of turmeric leaves
- 3 fruit belimbing wuluh
Spices:
- 20 onions
- 5 cloves of garlic
- 1 cm turmeric
- 1 cm ginger
- 250 gr chilli milled
- salt to taste
Kelapa dipanggang lalu diblender sampai keluar minyak. | The coconut is roasted and blended until oil exits.
Potong-potonglah gluten yang akan dijadikan rendang. | Cut out the gluten to be rendang.
Setelah dipotong, gorenglah gluten agar tidak hancur. | After cut, fry gluten to avoid crumbling.
Cara membuat:
- Potong- potong gluten 4 x 4 cm, tebal 3 cm
- Taruh potongan gluten yg sdh digoreng bersama bumbu yg sdh dihaluskan dalam sebuah wajan. Tuang santan dan kelapa panggang yang sudah dihaluskan, masukkan lengkuas, serai, daun kunyit dan buah blimbing wuluh. Masak di atas api sambil diaduk- aduk sampai mendidih dan santan mengental.
How to make:
- Cut gluten 4 x 4 cm, 3 cm thick
- Put the gluten chunks sdh fried together spices that sdh mashed in a frying pan. Pour coconut milk and grilled coconut that has been mashed, enter the galangal, lemon grass, turmeric leaves and fruit blimbing wuluh. Cook on the fire while stirring until boiling and coconut milk thickens.
Setelah santan mengental, kecilkan api, aduk dan masak terus sampai mengering sambil dicek rasanya. Dan kalau warnanya sudah cokelat kehitaman baru matikan api. Lama memasak kira-kira 3 jam. Selamat mencoba dan menikmatinya.
After the coconut thickens, reduce the heat, stir and cook until it dries while checking the flavor. And if the color is brown blackish just turn off the fire. Cooking time is approximately 3 hours. Good luck and enjoy it.
