Nice post. I make silimilar jam with apples and cinnamon. I have quinces in my garden so I make many jars of it. Mine quinces has a beautiful pineapple flavor, but needs some lemon juice.
My autumn is really filled with jars - I make a lot of nalewka, jams, marinated chillies. But I use it all year, so so it's worth it. ;)
