St. Valentine's dinner

Tonight I'm going to prepare a surprise St. Valentine's dinner to share with my wife, as we share our love.

Menu:

1) Grilled Giant Prawn

Ingredients:

Giant Prawn

Wooden skewers (soaked in water)

Olive oil

Crushed garlic

Lemon juice

Salt & pepper

Method:

Lightly baste the giant prawns with a mixture of olive oil and crushed garlic and place them on a wooden skewer to keep them straight when grilling (I recommend bamboo skewers that have been soaked in water for at least half an hour). Heat the grill to a high temperature and with a little brush baste it with a little olive oil for flavour. Place the prawns on the very hot grill and sprinkle with salt, pepper and a little lemon juice. Grill the prawns for 1-2 minutes on each side.

2) Fish & Vegetable Tempura

Ingredients:

Red Mullet fillets

Bass fillets

Baby asparagus

Green & red peppers

Eggplant

Zucchini

Shitake mushrooms

Japanese tempura batter mixture

Vegetable oil

Soja sauce

Wasabi

Method:

Cut all your ingredients into bite-sized portions and have them all ready before you mix the batter. Start heating the oil for deep-frying before preparing the tempura batter to ensure the oil is ready once you finish your batter. Quickly mix the tempura batter mixture into some very cold water. For a crisp tempura use ice water (add 2 ice cubes to your water) and mix in the Japanese tempura powder to create a smooth batter (try using chop sticks instead of a whisk to minimize the risk of over-mixing). Don't prepare the tempura batter ahead of time.

Dip your fish and vegetables (only very few at the time) into the hot oil. In a small side dish mix some soja sauce with a little wasabi and dip your fish and vegetable one by one into the mixture before popping them into your mouth. Delicious!

3) Dessert

All these delicacies were rounded off with some 'macarons' or 'petit fours' and a heart shaped chocolate mousse... and of course, accompanied by a good bottle of champagne...
