In some parts of the world, Mexico for instance, these are named Conchas. They're fluffy, almost puff like, but has a little crunchy exterior which sweet and just melts in the mouth. They have a shell like exterior and hence the name. It goes without saying that the ingredients involve a lot of egg milk and butter, but what really gets these just right are the aquafaba. In case you don't know what that is, it's the liquid brine from cans of chickpeas. You whip it until it has a meringue consistency and then proceed to bake. Obviously plenty of sugar is added to your hearts content.
