예전부터 종로에서 메밀로 유명한 미진
미슐랭가이드에 오를정도로맛있답니다

우선 주말에는 무조건 웨이팅 기본 ㅠㅠ
냉모밀은 1인분에 8,500원으로 1판에 2덩이 있는데
2판이 나와서 1인분입니다. 총 4덩이!
그렇게 양이 적은 편은 아닌거같아요

쯔유가 주전자에 나와서 셀프로 입맛에 맞춰 따라먹으면 되고
옆에 놓여져있는 파와 무도 취향껏 넣어 먹을 수 있어요
시판에서 판매되는 메밀보다 좀 더 부드러운 맛이라고나 할까
메밀 함유량이 높을 수록 푸석해질 수 밖에 없는 메밀의 특성상
많이 함유가 되어있는지 쫄깃하다기 보다는 약간은 푸석하다고 느낄 수 있지만
재료의 특성을 알면 이게 더 좋은거같아요
그리고 함께 주문한 메밀전병

굉장히 빨리 나오는데 속은 은근 매콤한 편입니다.
겉은 바삭하고 속은 촉촉한 전병
