Sebenernya saya nggak suka soto Betawi, tapi suami menyukainya, jadi berusaha bisa bikin sendiri utk menyenangkannya
Resep dr berbagai sumber, antara lain mb Susi Agung & Xanderskitchen...., tapi saya sesuaikan dg bahan yg ada di rumah & kondisi kesehatan suami yg punya hypertensi & sedikit cholesterol, asam urat diatas nilai normal...., saya nggak pakai jeroan, daging saya pilih yg tak berlemak dg santan tdk terlalu kental & pake susu non fat.
Daging yg telah direbus juga nggak saya goreng dulu spt resep asli krn utk menghindari byk minyak.
Emping mlinjo pun gak berani banyak makan.

Bahan-bahan
500 gr daging sapi, pilih yg cepat empuk & tak berlemak
750 ml air
500 ml santan
500 ml susu skim/non fat
1 batang serai
2 helai daun sala
2 butir kapulaga
2 cm kayu manis, jahe & lengkuas
1 batang bawang daun & secukupnya seledri, potong2
1 buah kentang ukuran besar, rebus, potong2
secukupnya garam & gula
secukupnya kaldu bubuk jika suka
Bumbu halus :
6 siung bawang merah
3 siung bawang putih
1/2 sdt merica butiran
1 sdt ketumbar sangrai
1/2 sdt jinten
Bahan pelengkap :
1 bh tomat, cuci bersih, potong2
secukupnya emping mlinjo goreng
2 buah jeruk limau, potong2
secukupnya sambel cabe rawit
secukupnya bawang goreng
Langkah
Rebus daging sampai empuk, sisihkan.
Tumis bumbu hingga harum, masukkan serai, kapulaga, kayu manis, daun salam, jahe & lengkuas. Masukkan tumisan bumbu ke dalam rebusan daging.
Masak dg api kecil supaya bumbu meresap ke dlm daging. Tunggu hingga air menyusut. Tambahkan santan, aduk rata sampai mendidih, lalu tambahkan susu, aduk rata, koreksi rasa.
Sajikan bersama pelengkap.
