Look here! Lots of enjoyment. Today I had to make coconut rice with fried plantain for breakfast.
I used our local small grain rice. So the taste will be better and sweeter.
Plantain Preparation
- All we have to do is get our ripe plantain
- Wash the plantain
- Peel it
- Slice them into your desired shapea and sizes
- Get your vegetation oil or your groundnut oil
- Put the vegetation oil on fire and leave the oil to get hot
- Salt your sliced plantains
- When the oil is super hot or moderate, you can start putting your sliced ripe plantains in the hot oil to fry.
- You bring the plantains out the oil when its done; how to know when its done is when the plantain changes into a more darker or thicker orange colour.
- Lay them on a flat stainless or breakable plate, any of your choice. Then go again to prepare your coconut rice to use with the fries plantains
How to prepare my coconut rice
- First of all, you will get you coconuts
- Break the coconuts, separate it from the shell or covering and wash them
- Grade the coconuts using a grader; this will reduce the shape of the coconuts, thus making it into tiny chaff
- When you are done grading it, you pour in a cup of water depending on the amount of your graded coconut
- When you pour in the water, you wash the coconut chaff, thereby extracting the sweetness of the coconut into the water, leaving out a tasteless chaff
- After this, we are done with preparing the coconut, all we have to do now is get your rice WS many cups as you want it
- Wash and parboil the rice, removing sand if there is any
- After washing and parboiling the rice, you put it on fire again and pour in the extracted coconut juice, you can add more water to the rice since the coconut extracted juice alone just wouldn't be enough.
- Then you add your condiments like, fish or meat, maggi, crayfish, salt, onions, pepper, etc
Now that is our final result, the summary of everything I have written. A plate of coconut rice and a plate of fried plantains.
