Sendai , The birthplace of gyutan ( beef tongue ) was founded in 1948 after World War II ,at Umami Tasuke 旨味太助 , by the man named Keishiro Sano , inspired by French beef tongue stew ,he decided to create the dish to suit Japanese taste .
They still serve the same way since 1948 , chargrilled Gyutan , rice with barley & clear oxtail soup .
