Had a lovely lunch today which was prepared using the NZ Hangi way, it was a going away for m y boss who is going to run the Canterbury plant.
How to Hangi?, This involves digging a pit in the ground, heating stones in the pit with a large fire before placing baskets of food on top of the heating stones. A cover is put on covering everything with earth for several hours before uncovering (or lifting) the hāngi and serving
We had pork/lamb/chicken and vegetables...mmmm kumera and maybe a beer

I haven't had Hangi food for quite a few years, it was something I would make sure I would experience every time I made it back to NZ, the taste of food out of a Hangi is so special, thanks for reminding me how good it was
