TIL that spatchcocking (butterflying) your turkey is the most efficient way to cook it

Confession: I had not heard the word “spatchcock” before. Spatchcocking your turkey means butterflying it so that the bird can be cooked more evenly. Apparently, it’s the best way to cook the turkey and keep it moist and tasty.

Totally makes sense - thorough cooked and crispy. I've not heard of that term before....only butterflying a bird...which when you think of it makes no sense. ...can a butterfly be birded then? Oh the possibilities :)

Poor turkey 🦃, glides down to the field to graze for some lunch stunned to find a bullet ripped into its throat, only to be spatchcocked by some grandmother on thanksgiving morning. That's a tough way to go.
