DAY OUT SHOPPING IN VIAREGGIO

Right folks,

The yacht arrived in Viareggio so I dashed out to buy some fish. I had a tip-off from another yacht chef that there was a fish shop downtown. Beautiful fresh fish, definitely cheaper than the south of France.

Bought some Dorade or Oreta in Italian.

Weird one called Serra or Bluefish. Night hunter, my boss certainly would not accept this on the menu, so I served this to the crew.

I bought some Vongole.

Throw them in a pot with this veg and some good Italian white wine.

Keep the lid on.

They should be fully opened before serving.

I salted baked the dorade.

I asked the fish monger in my bad Italian to leave the scales on as this gives it extra protection when salt baking.
Just look at it, so moist and delicious.

When leaving the scales on the skin. The skin just whips off in one, after you remove the salt.

And for no good reason and with absolutely nothing to do with this blog, here is my beautiful wife and youngest son Oliver.
