Gourmet Christmas Pudding. For serious foodies. Just plants & love

With Christmas just around the corner, it is worth investing our time into making this festive time not just exciting, but also HEALTHY for our SELF and our loved ones.

This unique White Christmas Pudding is from my book Chocolate Revolution.
It is not the easiest recipe in the book, but my my my - it is loved by everyone - kids and non vegans included.

It takes around 30-40 mins to create this love bomb, excluding waiting time.

We need:

Tools: bowls, a silicon pudding form, plate, parchment paper, cutting board, hands, imagination

Step 1- Make the fluffy pudding mix:

Ingredients:

  • 1 cup of coconut flour ( i heard from my students that desiccated coconut works as well)

  • ½ cup nut milk OR spring (filtered) water, if you wish to keep your treat nut-free

  • 5 T raw coconut oil, melted

  • 3 T coconut nectar (or any other new earth liquid sweetener), for those with diabetes we use stevia

  • ½ cup raw cacao nibs

  • ½ cup dry goji berries

  • ½ cup cranberries

  • ½ cup dry blueberries or raisins OR any other dry fruits you might have - strawberries/figs/prunes/raisins

  • 1-2 T grated orange peel

  • 1 t vanilla seeds or essence - the best kind is Madagascar

  • 1 t cinnamon powder

  • 1 T finely chopped fresh mint leaves (optional)

  • A few fresh mint leaves and goji berries for garnish

How to:

In a large bowl mix the coconut, nut milk/water, sweetener and coconut oil until texture is fluffy and creamy.

One by one, add in the remaining ingredients. Mix with love.

Mindfully transport this “creamy happiness” into a silicon pudding form.

Place in the freezer for a few hours to settle.

Step 2 - Make the base (feel free to skip this step):

Ingredients:

10 pitted medjool dates
A pinch of Himalayan salt
8 T raw cacao powder
2 T dry goji berries
½ t vanilla
Blend all the ingredients into a smooth paste and make a flat pancake. Spread on a plate covered with parchment paper.

Step 3 - Create white pudding:

Remove the pudding from the freezer and from the mould.

Place it onto the base. Using hands or a folk adjust the base layer to fit the bottom of the pudding.

Step 4 - Make the chocolate topping:

Ingredients:

2 T raw cacao powder
A pinch of Himalayan salt
1 T new earth sweetener of your choice
3 T raw cacao butter or coconut oil, melted

Lovingly mix all the ingredients into a smooth, seductive chocolate liquid and pour it over the white pudding. Let it make its own design. Garnish with your love and imagination.
