Ok, so maybe pancake day was officially yesterday, but, any day is a good day for pancakes!
The recipe for these delicious vegan pancakes is super simple
Ingredients
- 1 1/4 Cup of Plain Flour
- 1 Cup of Plant-Based Milk
- 1 Tbsp of Vegetable Oil
- 1 Tsp of baking powder
Simply whisk all the ingredients together into a smooth batter. Heat a little oil in a good non-stick pan and pour a little of the batter in, ensuring it covers the bottom of the pan.
Once the pancake begins to cook it will become loose in the pan. At this point it will be ready for flipping.
I personally prefer to flip it by tossing it in the air to catch it in the pan, but turning it with a spatula is ok too.
When the pancake has cooked on both sides then it is ready to serve. We served these pancakes with bananas, summer fruits and cream. My favourite is banana and lotus spread. What's your favourite pancake topping?
