This simple carrot soup is made of a base of my homemade vegetable stock, roasted carrots, shallots, cumin, Caraway, fennel, coriander and peppercorn summed with a bouquet of parsely, lemon thyme, garlic, more fennel and oregano. Finished with lemon zest and lemon and blended to perfection.
Simple ingredients put in at various times with love and patients can create a beautifully complex dish.
