VEGAN Chili spiced with hints of cinnamon, cocoa and brown sugar!

Chili spiced with hints of cinnamon, cocoa and brown sugar to add depth and nuance to this classic recipe. It's delicious and a little unexpected!

Serves 3-4

2 tbsp Olive oil
3 cloves Garlic, minced
½ Red onion, chopped
½ Red bell pepper, chopped
½ Green bell pepper, chopped
½ Yellow bell pepper, chopped
6-10 Button mushrooms, sliced
1 ½ cups dry White wine
1 29-oz can Tomato sauce
1 29-oz can Diced tomatoes
2 15.5-oz cans Kidney beans, drained
2 tsp Chili powder
1 tsp Cumin
½ tsp Cinnamon
1 tsp Cocoa powder, unsweetened
½ tsp Paprika
1 tsp Oregano
½ tsp Cayenne
1/3 cup Brown sugar
1 tsp Salt
½ tsp Black Pepper

GARNISH: chopped tomatoes, cilantro and avocado

INSTRUCTIONS
Saute the onion, garlic, peppers and mushrooms in the olive oil over medium heat for 5 minutes. Add the remaining ingredients and simmer for 30 minutes. Garnish and serve hot.

Note: this recipe freezes well and makes an excellent recipe for meal prep.

Ooh, I am a huge chili fan, too. I've used beer in mine before, but never tried white wine. I bet the cocoa adds a nice depth, too! Thanks for sharing!

Beer is such a great idea! I think I remember seeing a recipe that had Guinness in it for St. Patrick's day. I might just have to play around with different beers now that I know it's a real thing. Thanks so much for the idea!!!
