I was talking about remembering that we need plastic bags or something, and @kitzchris was like "oh, I didn't even know we were getting enchiladas".
He just imagined it but then we made it come true. It seemed like the best thing to have for dinner.
Christopher did some sort of yummy thing to make the sauce, and he mashed a mixture of black beans and pinto beans, and then put orange, yellow, and jalapeno peppers and frozen corn into a little pan to "dry heat" them.
We stuffed the tortillas with the beans and veggies and So Delicious cheddar jack, and then topped them with another layer of cheddar jack and Daiya mozzarella.
@kitzchris used to blog sometimes, but now he just pretends I said things that I didn't say and makes yummy food and will probably never read this.
We served it with a ripe avocado and tortilla strips.
This meal is probably like $3-4 per person (more like $2-3 if you eat a more reasonably sized amount), and also meat and dairy free.

yaaaa, for our bodies, absolutely... the holy trinity! lol. We really are all in balance, all from the earth, so makes perfect sense that you help or hurt all of it at the same time.
I'll have been vegan for 3 years by this spring, and that's great.. vegan family sounds amazing, and love that your daughter led the way too.. the kids know all the answers lol
For me.. I started listening to a lot of youtube videos in like 2011 or so and it just kind of became clear it was the right thing to do, and eventually acted on it. So easy once you get going.
It would actually be really hard for me NOT to be vegan now lol, I'd immediately feel gross.

yaa, when I was biking a lot a couple summers ago and eating pretty clean (smoothies, veggies etc) I was between 4-5K per day..
there's a site cronometer.com where you can enter all your food and it shows all the vitamins and minerals and everything
I wasn't deliberately trying to eat that much, just eating as I felt like I needed it and keeping track, I think I basically needed that amount of calories tho before I'd start hitting 100% on all the essentials
Right now I'm like a junk food vegan and don't feel qualified to give any advice lol, but ya that website is good to track your intake and what it's doing for you
Obv with dairy and meat mixed in.. or in my case right now, oils and processed vegan foods, there'd be a downside to smashing in unlimited calories. So that advice is more for if your diet is fairly clean.
In general tho, on a vegan diet, you do want to eat a lot in order to feel satiated. And that can be one of the things that takes some getting used to. Sometimes you need to be willing to eat 3 sandwiches instead of 1.

ya for sure! My favorite recipes are like buffalo chikn sandwiches and things that aren't necessarily quick
for quick and healthy I feel like I love pasta and rice (well some people say grains aren't healthy, I dunno.. for a young athlete I feel like they're beastly)
Love smoothies too, but oddly they aren't always fast, when it comes to peeling the bananas and scooping out peanut butter and all the various steps.. washing the blender sucks

I am not a vegan but I admire the hell out of people that are. I can't shake the dairy the eggs. But when you look at what Ricky Willaims was able to do on his second (or third) stint in the NFL after going Vegan, at around age 33-34, he had his best years for the Dolphins. Another example was Arian Foster who went undrafted, but then took his game to another level after going Vegan. I read up on weightlifting articles to get ideas for my program and lot of the top bodybuilders are, at a minimum vegetarian, but some are vegan. I could probably make the leap if I settled down and got married. I would honestly probably need a woman who enjoyed cooking to "Level Up."

Hehe awesome, ya it does help to either like cooking or have someone who can do it.. vegan options are getting more and more common but it's always hard to change what you're used to, and would be expensive to eat out all the time.

The sauce was basically spanish tomato sauce with a little chili sauce mixed in, and I think Chris probably sauteed onions and Sofrito in the pan first.

I'm struggling to find the recipe that we used (I think we winged it a little too..)
In general, you want to stuff a corn tortilla with yummy stuff. We used a mixture of black beans and pinto beans (we cooked them and then mashed them), corn, and peppers (orange pepper, yellow pepper, and jalapeno).
Then for the sauce, in a pan we sauteed onion and sofrito, and then added tomato sauce (Spanish style is the best but anything should work fine), and probably various seasonings like Adobo and sazon.. just use whatever seasonings you like and are available to you. I think we sauteed garlic in the pan too actually.
Basically it's one of those things you could make a lot of different ways.
And then of course a vegan cheese, if you have it available to you. We put some inside the tortilla and then plenty on top. You want to put a thin little bit of the sauce on the bottom of the pan, and then you put the folded tortillas on top of the sauce, and then more sauce on top of them (so that they're covered basically), and then cheese on top and you bake it until the cheese is melty and it's hot.
Raw onion would probably be good too imo, like maybe on top under the cheese.
Daiya cheese is pretty good. There are better vegan cheeses imo. Daiya is probably the most well known and usually the easiest to find.. I like them all and like trying different ones.
