Recipe of Vegan Mafé
Mafé is a traditional Senegalese cooking stew that consists of one of the variations of nut stews popular in virtually every country in Africa. It is a hypercaloric stew, that is to say, it has several ingredients that contribute a great quantity of calories. Its main ingredients are usually meat (as it is a recipe for vegan mafé without ingredients of animal origin we will use seitan or any other vegetable meat whose recipe you can find in my Free Recipes profile), starchy vegetables such as yucca and potato and various vegetables such as onion, carrot, eggplant, green beans, tomato, pepper, you can also add other vegetables such as cabbage, sweet potato, pumpkin, etc... The key ingredient of the Senegalese mafé is the cream or butter of some nut and the most used is the peanut cream. This peanut stew is usually accompanied by white rice.
Ingredients:
200 grams of seitan or other <b>vegetable</b> meat
1 onion
½ cup of peanut butter
½ red pepper
½ yucca
2 potatoes
1 carrot
1 large tomato
1 hot pepper (optional)
½ aubergine
1 handful green beans
1 piece of black pepper
1 jet of vegetable oil
½ teaspoon of salt
½ vegetable stock cube
Steps to follow to make this recipe:

Peel and dice the yucca, sweet potato or potatoes, onion, pepper and eggplant, and cut the green beans into pieces and the carrot into slices.

Heat a pot with oil and sauté the diced seitan with a little salt and pepper. When the seitan or the vegetable meat is browned, remove it from the pot and set it aside.

In the same pot poached the onion. When it starts to brown add the pepper and sauté until the vegetables are soft.

Add the peanut butter to the sofrito and stir.

Grind the tomato and add it to the pot together with salt, pepper and optionally the finely chopped hot chili, mix until all ingredients are integrated and cook for a couple of minutes.

Add half a litre of water and when it comes to the boil add half a cube of vegetable stock and vegetables: yucca, potato, green beans, carrot, eggplant and seitan or vegetable meat.

Cook Senegalese mafé vegetables until tender and broth is reduced.

Serve the vegan mafé recipe with white rice like I did - a great combination!
