Vegan German Plum Pie

What you need:

1 1/2 cups flour (white or blend or wheat, what ever you have handy)

3 tbsp brown sugar

1 pinch sea salt

1 tsp backing powder

1 tbsp flaxmeal

2 tbsp virgin coco nut oil

1 cup coconut milk ( or soy milk or orange juice what ever you like and have in the house)

1 lb pitted and halved plums (fresh or jar)

1 tbsp vanilla sugar

What to do:

1 start by preheating the oven

2 take a big bowl and mix all the dry ingredients thoroughly (except the vanilla sugar and the plums of course)

3 now add the oil and stir it in, make sure to distribute the oil aka fat evenly into the flour

4 add the Milk or juice - which ever you decided and stir till you have a nice smooth dough

5 grab a spring form and brush it out with some oil or other fat to prevent the dough from sticking to it

6 pour/push the dough in to the backing form and spread it out making it a bit higher around the edges

7 now take your plums and arrange on top of the dough

8 take the vanilla sugar and sprinkle it on top of the plums

9 now place your cake in the oven and bake for about 20 minutes on an upper tray on medium heat
