Hello My Dearest Foodies,

I just made this delicious dessert yesterday, specially for our amazing @vegan.niinja. I know it is the last minute, but I am having hard time keeping up with everything I am doing. Nevertheless, I would't miss it for the world, because she is my Dear Friend and she always participates in my #fruitsandveggiesmonday contest with her absolutely dreamy creations. Although this recipe is very simple, it is super yummy and I hope she will like it. So again, HAPPY BIRTHDAY Dear Nina and sorry for being almost late.

RASPBERRY MARBLE CHIA
White Chia Pudding with Raspberry Puree
Vegan – Gluten Free
Author: Lena’s Vegan Living

INGREDIENTS for 2
β€’ Light coconut milk 1 3/4 cup
β€’ White Chia 1/3 cup
β€’ Pure Vanilla extract 1tsp
β€’ Maple syrup to 1/4 cup plus 1 tbs
β€’ Frozen raspberries 1/2 cup
β€’ Fresh Raspberries 1 cup
β€’ Pistachios 1tbs (shelled & grind)

PROCESS
β€’ Let the frozen raspberries defrost in a bowl on the counter or if you are in a hurry, you can do it above the steam.
β€’ When ready, add 1 tbs maple syrup and whisk thoroughly until you have a puree.
β€’ Divide in two halves; pour into your chosen jars and pace it into refrigerator.
β€’ Mix the coconut milk with Chia and maple syrup thoroughly in a bowl.
β€’ Leave it in the refrigerator for 1 hour.
β€’ When ready, pour half in to each jar on top of raspberry puree.
β€’ Place into refrigerator for couple more hours or even better over night.
β€’ Top with fresh raspberries, pistachios and serve.

Hi @lenasveganliving, I have to say, your posts have really caught my attention. I’m not actually vegan but I have a big interest in food, cooking and photography and your recipes and images are striking. Im currently living in China and it’s a challenge finding simple things like bread, ethically reared meat and whatnot so I’ve actually started to practice more veganism and your recipes have made it a lot of fun as well as inspiring. I’m not really an active blogger as such apart from entering the Steemit Iron Chef contest but your recipes have encouraged me to take a peek at the vegan section more often! Thank you for the creative recipes :-)

I'm used to chia seeds but what is white chia my dear ...?

Thank you my dear...I read there is no difference between both in terms of health benefit....I had never seen white and I use chia seeds every morning in my breakfast smoothie or pudding ^_^

Hi Lena, Your post is lovely, I recently tried to make chia pudding but it did not work. I left it in the refrigerator since the night before, no idea what happened LOL

Thank you so much Sweetie and I am sorry to hear that, maybe you had too much milk and not enough chia. You need 1/3 cup of chia and no more than 1 3/4 canned coconut milk, plus 1/4 cup maple syrup.

Yes, I put a small amount, because I already have very little chia and replacing it at this time is very expensive. Thank you!

Oh wow you really know how to suprise me darling, what a delicious entry you have created, lately I am very much into chia pudding, and you know my passion for raspberries by now! Thank you sweetheart, I need to visit you one day in Canada, actually when I think about it, my sister is going to study in Canada for some months after the summer, so if she is there, I have one more excuse to come to visit you!!! Awwwwwwwwww Sweetie, I am so sorry for the late reply, but you know, the FAV contest is very demanding, so I am still catching up.

I am so happy you like my chia pudding recipe, it can't get any impeller than that, lol, but I have to admit, it tastes is really yummy. However, the most exciting fact is the idea of you coming to Canada and your sister coming here to study. Oh my gosh!!! Where exactly she is going to be? I hope Toronto.
