Hey guys, I don't get on here as much as I'd like these days but thought I'd pop in quickly to share this amazing cake I made over Easter! It was a massive hit and my whole family (all omni) said it was the best carrot cake they've ever had- such a massive win for veganism! π₯
It requires quite a lot of ingredients but is really pretty simple to make, so it's easy to impress with this no-fuss recipe!
Cake ingredients:
- 270g carrots
- 135g walnuts
- 1 orange
- 135g sultanas
- 400g self-raising flour
- 2 tsp baking powder
- 240g soft light brown sugar
- 1/2 tsp ground nutmeg
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 400ml soya milk
- 160 ml vegetable oil
For the lemon buttercream icing:
- 3 and 3/4 cups (450g) icing sugar
- 3 Tbsp vegan butter
- 1 tsp vanilla extract
- 2 tsp apple cider vinegar
- The juice of one lemon
Method:
Preheat the oven to 180Β°C and grease two 9 inch cake tins.
Peel, trim and grate the carrots into a bowl.
- Put the walnuts in a plastic zip lock bag and crush with a rolling pin until they are evenly crushed.
- Add the walnuts to the carrots along with the zest of the orange into and the sultanas.
- Next, add the flour, baking powder, sugar, nutmeg, cinnamon and salt into a large bowl.
- Mix the soya milk and oil in a jug, then tip them into the large bowl with the dry ingredients. Mix until combined and the batter is fairly smooth.
- Add the carrot, walnuts, orange zest and sultanas and stir until fully combined.
Divide the cake mixture between the two tins.
Bake for 25-30 minutes until a knife or skewer comes out clean. Leave to cool in the tin for 5 minutes, then turn out onto a cooling rack and leave until fully cool.
Meanwhile add the icing sugar, vegan butter, vanilla, apple cider vinegar and lemon juice to a bowl and mix with a hand blender.
If your frosting ends up too thin, add more powdered sugar. If it is too thick, add a little water.
Add frosting to the top of one of the layers, then add the other layer on top and complete the frosting of the top and sides of the cake.
- Sprinkle crushed walnuts on top of the cake and serve.
That's all there is to it. A super easy and extremely delicious, moist and fruity carrot cake, a total crowd-pleaser! This cake was even more delicious the next day, so if you can try to make it the day before you have guests over!
