🕷️🕸️ Creepy Crawly Cupcakes! (VEGAN)🕸️🕷️

Hi all! With Halloween upon us, I thought I'd share some of my fun and delicious spooky treats!

These cupcakes are super easy to make, and lots of fun to decorate so perfect to make with kids or to have around for Trick or Treaters ( if you can bear to give them away!)

And more importantly, 100% vegan! So there might be scares in store this weekend, but the ingredients of your cupcakes won't be one of them 😇

I'm not much of a cake decorator, but even I could manage these. They're literally fool proof and I'm the proof!

You don't need any fancy ingredients here, most of the ingredients you will probably have in your cupboard.

The more experienced baker will no doubt use a piping bag and colour their own home made icing to decorate their cakes but being the novice that I am I opted for some awesome (and vegan!) icing tubes I found in the supermarket.

Ok, let's get spooking... Er I mean cooking!


Ingredients:

1 cup milk alternative (I used almond milk)
1 teaspoon apple cider vinegar
3/4 cup of caster sugar
1/3 cup of melted coconut oil
1 1/2 tsp vanilla extract
1 cup self raising flour
1/3 cup cocoa powder
3/4 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt

Icing:

150g Icing sugar
1 Tbsp dairy free butter ( I used coconut & rapeseed oil spread)
2 Tbsp any milk alternative ( I used almond milk)
1 tsp Vanilla essence


To decorate:

6 Oreos, or similar biscuit
Black and white icing tubes ( or make extra icing and colour using food dye)

Method:

  • Preheat the oven to 175 c (350F)

  • Line your muffin tray with muffin cases and place to one side.

  • In a large bowl, add the apple cider vinegar to the almond milk and put to one side to begin to curdle.

  • In the meantime, sieve your flour, cocoa powder, baking soda, baking power and salt into a large bowl and mix well.

  • Add the sugar, melted coconut oil and vanilla essence to the almond milk mixture and mix until frothy.

  • Gradually add the wet mixture to the dry mixture, stirring well to eliminate any large lumps.

  • Pour the batter into the muffin cases, about 3/4 of the way full.

  • Put in the oven and bake for 18- 20 minutes or until the cakes are bouncy when pressed gently with a fork.
    (while they are cooking prepare the icing)

  • Remove from the oven and leave to cool.

Icing method:

  • Add the icing sugar, vegan butter, milk and vanilla essence to a mixing bowl.

  • Mix briskly with a wooden spoon until perfectly smooth.

  • The consistency should be thick but spreadable. If it is too thin, add a bit more icing sugar. If it's too thick add a bit more milk and stir well.

Decoration:

  • You can also begin decorating the Oreos while the cupcakes are cooling.

  • Separate the Oreos and use the side that doesn't have icing on it. You can use the iced side but I personally don't think it looks as good.

  • Use the black icing tube, or piping bag to colour the top of the Oreos black, starting from the middle and going out in a circular motion.

  • Leave them to dry then use the white icing tube to draw the white part of the eyes on.

  • Once that has dried, finish by adding pupils with the black icing tube.

  • Once the cupcakes have cooled, use a knife to evenly spread your freshly made white icing onto them.

  • Leave the icing to set.

  • Then, using your black icing, draw spider legs onto half of your cupcakes.

  • Add a dot of icing to the centre of the cake to act as glue to hold on the Oreo, add Oreo.

  • With the remaining cupcakes, draw a spider web using the black icing tube.
