Raspberry Vinaigrette Recipe

The benefits of eating raspberries are well-known. High in minerals and anti-oxidants; raspberries are known to help fight cardiovascular disease, inflammation and to boost immunity. That’s a lot of power in such a little berry. This dressing goes particularly well with spinach, fresh fruits, berries, nuts (especially pecans) and avocado. Saffron adds that luxurious touch. There is no real substitution for saffron. Use judiciously.

Ingredients:

1 cup Olive Oil
1/3 cup Lime Juice
3 cups Raspberries (may substitute half blackberries)
3/4 cup Water
1 tbsp Apple Cider Vinegar (or Red Wine Vinegar)
1 tbsp. Pure Maple Syrup
Himalayan Salt and Black Pepper (to taste)
1-2 tsp. Saffron (optional)

Directions:

Combine all ingredients in a blender or food processor. Blend for one minute or until smooth. Serve with green salad. Makes about 3 cups.
